Healthy Dish of The Week - Asian Style Stir Fry

Check out our new Healthy dish of the week, now going to be ever last week of each month.

This weeks recipe is an Asian style stir fry, a very healthily treat indeed. Quick, simple and packed with some great fresh flavours and it want cost you the earth to make. High protein and low carbs makes this a great one for those working on their beach body's, summer is not to far away! And for those that done mind the little extra carbs serve this up in a wrap (my favourite) or sided with some noodles or brown rice.

Serves 1 (double up for 2 and so on)

1 turkey steak (approx 125g) or 1 small chicken breast, cut into small strips
1/2 red chilli, chopped small (seeds & pith out for mild, leave in for hot)
1/2 red onion, sliced thinly
6 chestnut mushrooms, thinly sliced
1 small bulb garlic, sliced thinly
10 mange tout or sugar snap peas, cut in half
2 medium sized Savoy cabbage leafs, washed & sliced thinly
1 large egg
Small bunch of coriander, roughly chopped
1 small wedge of lime
Small Drizzle of rapeseed or olive oil
4 tbs water
Splash of fish sauce
Splash of soy sauce

Method:

1) Start with heating a wok or large enough frying pan over a medium to high heat, drizzle in a small amount of oil and add the sliced onions, fry until golden brown. Now add the turkey/chicken pieces, (stir often) be sure to seal the meat on all sides, then turn down the heat to medium low.
2) Add chilli, garlic and mushroom, cook for 2 minutes (stir often) then add a splash of both fish sauce and soy.
3) Turn the heat back up to medium high and add the mange tout, cabbage and water (the water is In place of more oil being added, a much healthily method of cooking instead of frying you will be boiling & steaming the ingredients and still retaining flavour) boil away for around 3/5 minutes until most of the liquid has reduced. (Stir occasionally)
4) Time for the egg, with a spoon make a well in the centre of your mix and crack in the egg, half cook it before breaking and scrapping it up as if you were making scrambled eggs, when completely cooked mix in with the rest of the ingredients and turn off the heat.
5) Finish with a squeeze of lime and a small handful of chopped coriander. Great on its own or serve up with your own chosen side dish.
