Recipe of the week - Chicken, Avocado + Spinach Wrap
This weeks recipe of the week is a tasty little lunch time treat spicy chicken, avocado and spinach wrap.
Serves 2
The Ingredients:
2 Chicken Breasts
1 Avocado (peeled & sliced)
2 small handfuls of Baby Spinach
2 tbs Natural Yoghurt
2 Wraps
1tsp Paprika
1/2 tsp Cayenne Pepper
1 tbsp Honey
Salt and Pepper
Drizzle of Olive Oil
The Method:
1) Start with cutting the chicken into thin strips and place into a bowl, add cayenne pepper, paprika, honey and a pinch of salt & pepper, stir and leave to marinated for 5 minutes.
2) Heat a frying pan over a medium heat, add a drizzle of olive oil add chicken and cook for 5 minutes until fully cooked. Remove from heat.
3) Place each wrap onto separate plates and place on a small handful of spinach, avocado slices (half in each) and dollop over the yogurt, equally divide the chicken and place on top. Roll up the wraps and your ready to eat.
You can also use Cajun or fajita spices for these wraps or have some fun making up your own flavours!
